Butter is Better!

Butter is something that I cook with, bake with, and eat regularly so I really enjoyed this article from Maria Atwood. I believe the information is worth passing on to you.

Hello dear friend-

In the beginning of Maria’s article, she refers to a separate article “Why Butter is Better” written by Sally Fallon and Mary G Enig.

Here is a summary of the main points to consider and the reasons I love butter:

Butter contains lecithin. Lecithin assists in the proper assimilation and metabolism of cholesterol and other fat constituents.

Butter contains vitamins and minerals that “protect against the kind of free radical damage that weakens the arteries.” It is also rich in Vitamins A and E and the mineral selenium.

Butter is a good source of cholesterol. Eating butter over margarine decreases the risk of developing heart disease.

Butter, cholesterol, and bile. Cholesterol is so very important in the formation of bile. Butter helps with the making of bile. Bile is like soap to your fats, it breaks them down. We need bile.

With all that being said…don’t go crazy with butter. Too much of a good thing is not a good thing. Butter is better for you than margarine, vegetable oils, and a diet of only coconut oil.

I encourage you to enjoy a healthy dose of butter!
